Gluten Free Pumpkin Chocolate Chip Muffins

i have shared this recipe with a few ladies on line and thought i would just post it here as well for all to enjoy.

a few of you out there are following or know someone who is following a Gluten Free Diet. it isn’t easy to do but so worth it in the long run. i have been following a Gluten Free diet since being diagnosed in 2005. At first it was so very hard. it seems like EVERYTHING has gluten in it and i am such a carb-a-holic!!!!

anyway i know you aren’t here for the story but the recipe. so with out further ado…

Gluten Free Pumpkin Muffins

2 eggs
1 cup sugar
1/2 cup oil
1 cup pure pumpkin(not pie filling as it contains gluten)
1 1/2 cups GF flour**
1 1/2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips

Beat eggs slightly, add sugar, oil, pumpkin and mix thoroughly.
Sift flour and add remaining dry ingredients. Add dry ingredients to egg mixture. Mix until blended.Stir in chocolate chips

Bake 350 degree oven for 20 minutes

**Gluten free flour mix i use for all baking is Betty Hageman’s Featherlight Mix
1 cup Rice Flour
1 cup Tapioca Starch
1 cup Arrowroot flour or Cornstarch
1 TBSP Potato flour (not potato Starch)
i make up a big batch for all my baking and just store it in a container
